You Don’t Know JAK BBQ is a Veteran owned small business in Central Texas that specializes in exceptional BBQ. While stationed at Fort Hood, Texas in 2012, John began his love for smoking meats and learning fire management. His grilling experience both good and bad has molded him today and the experience he’s gained is showcased in all his food he creates. As a natural, he started crafting his own delectable, mouthwatering blend of rubs and sauces that left everyone raving about his food. With positive feedback from family and friends, he received encouragement to start a food business and decided to take the leap.
In 2017, John founded You Don’t Know JAK BBQ with a menu comprising of just eight items – four meats and four sides. He created a menu and distributed it among acquaintances working on Fort Hood. They would return their orders by Wednesday evenings. John would then prepare every plate in time for Friday’s lunchtime.
In 2020, he introduced his food truck and began setting up at various locations and while also competing in BBQ competitions and cook-offs. The expanded menu offered seven meats, six sides, and four sandwich options. However, being a one-person operation took its toll, and he eventually sold the trailer to focus on catering and competitions.
Going forward, we’re currently developing our own line of sauces and rubs. Remember, don’t abandon your passion – sometimes, we just need to modify our approach and keep moving forward!

Yes, minimum amount of people we cater for is 10. The maximum amount of people we cater for is 50.
Unfortunately, we do not.
We offer our catering services throughout Central Texas ranging from residential homes to parks, churches, and many other types of businesses. There is a flat rate of $25.00 past 15 miles and an additional .25 cents per mile after 30 miles.
You can purchase our sauce at our shop on this site.
For Catering, we accept cash, credit/debit cards.
Online purchases , we accept credit/debit cards, Apple Pay, and Google Pay.
We do have some Keto-friendly options with our catering services. Contact us for details.
We offer brisket, pork butt, sausage, chicken, and ribs (St. Louis Style, Sparerib, Baby backs).
We offer mac & cheese, green beans, baked beans, coleslaw, collard greens, potato salad, corn, tossed salad.
